This is another dish prepared by Alicia for the Rainforest Retreat held in Cairns in July. Chia puddings can be expensive to buy but quite cheap and easy to make! Chia seeds are a good source of omega-3 fatty acids, fiber, antioxidants, iron, and calcium.
3 tablespoons of Australian-grown chia seeds
1 cups unsweetened coconut, almond, cashew or macadamia milk
1 tablespoon maple syrup, honey or sweetener of your choice (optional)
Pinch ground cinnamon
Pinch ground cardamon
Pinch ground turmeric or a small piece finely grated turmeric
Passionfruit pulp, finely chopped fruit and/or mint leaves for topping
In a bowl or jar, add the chia seeds, milk of choice, maple syrup (or sweeter) and spices. If you’re using a jar, you can put the lid on and shake to mix everything together.
Let the mixture sit for 5 minutes and then give it another stir or shake
Cover and put the mixture in the fridge to set for 1-2 hours
Top the pudding with the finely chopped fruit, passionfruit pulp and/or mint leaves.
