A very easy and quick (but delicious!) lunch time option.
1 400g can chickpeas, drained and rinsed
1 small red onion, finely chopped
1 cup coarsely chopped fresh parsley
1 cup coarsely chopped fresh mint
1 Lebanese cucumber, coarsely chopped
1 250g punnet cherry tomatoes - quartered
1 and 1/2 tsp ground cinnamon
1 and 1/2 tsp ground cumin
1/4 cup lemon juice
1 tblsp olive oil
Salt and pepper to taste
Combine all ingredients in a large bowl.
